The vineyard’s clay and calcareous marl, with sandstone in the soil, provide the setting for an individual interpretation of the region’s signature grape.\u003c\/p\u003e\n\u003cp\u003eHand-picked whole bunches are gently foot-trodden, followed by careful pressing. Fermentation takes place spontaneously in a 500-litre tonneau, where the wine also undergoes malolactic fermentation. A further six to eight months on the lees develops its texture before bottling directly from the barrel without filtration or pumping.\u003c\/p\u003e\n\u003cp\u003eExpect a dry rosato with bright red berry and pomegranate notes, herbal freshness and a lightly savoury finish. Its combination of freshness and texture makes it an appealing wine for the dining table. We suggest serving it lightly chilled with charcuterie, tomato salad, grilled fish or roast poultry.
