2023 Guilbert Gillet Savigny-lès-Beaune "Aux Champs des Pruniers" VV (Drop at year Label*)

This Vieilles Vignes Savigny-lès-Beaune comes from Guilbert Gillet, a young domaine founded in 2020 in the Côte de Beaune. Produced from old-vine Pinot Noir, the wine reflects the estate’s parcel-focused approach and its ambition to show Savigny-lès-Beaune with both elegance and substance. The 2023 vintage is expected to combine bright red fruit with the supple, polished texture characteristic of a successful Burgundy growing season. Aromas may suggest raspberry, cranberry, redcurrant and violet, gradually developing notes of fresh earth, forest floor, spice and discreet oak. On the palate, the wine should be energetic and refined, with juicy fruit, finely structured tannins and a savoury mineral finish rather than excessive weight. Guilbert Gillet’s reds are fermented in stainless steel and matured for around 18 months, generally without fining or filtration, allowing the vineyard character to remain expressive. Serve at approximately 15–17°C with roast poultry, duck, mushroom dishes, charcuterie or simply grilled pork.
