2023 Guilbert Gillet Bourgogne-Aligoté Aux Boutières Vieilles Vignes (Drop at year Label*)
From a small, increasingly sought-after domaine based in Savigny-lès-Beaune, this Bourgogne Aligoté comes from old vines planted during the 1940s and 1950s in the clay-rich Aux Boutières parcel. The wine is made from 100% Aligoté and combines the variety’s naturally lively acidity with the concentration and savoury depth associated with mature vines. The 2023 vintage should offer aromas of lemon, green apple, white flowers and fresh herbs, supported by a subtle mineral and earthy character. On the palate, it is likely to feel broader and more textured than a straightforward Aligoté, with generous citrus fruit, gentle creaminess and a refreshing, persistent finish. The estate farms organically, works carefully in the vineyard, and ages its whites in older barrels for approximately 18 months, with restrained bâtonnage. Enjoy it lightly chilled as an aperitif, or pair it with oysters, sashimi, goat cheese, gougères and Cantonese seafood dishes. It is a particularly compelling expression of serious, age-worthy Aligoté.
