2021 Guilbert Gillet Savigny-les-Beaune

Benjamin Gilbert, born in 1991, founded his winery near National Route 74 between Dijon and Beaune in 2020 after working at prestigious estates like Domaine de Lambrays, Guigal, Trimbach, and Haut Brion. Inspired by Jacky Truchot, he began with 0.2 hectares in Savigny-lès-Beaune and now owns 3.6 hectares of organically farmed vineyards. Producing both domaine and négociant wines, he practices traditional, low-intervention winemaking—manual labor, horses instead of tractors, old barrels, and hand bottling. His whites ferment in steel, while reds are destemmed and aged 18 months unfiltered, reflecting his commitment to quality and craftsmanship over efficiency.
