The 2021 Michael Mara Vineyard Blanc de Blancs (Ultramarine) shows a slightly lighter body than the Heintz bottling but emphasises incisive freshness and rocky minerality. Expect aromas of green apple, lemon peel and subtle stone fruit over chalk, oyster shell and a hint of smoke. The palate is clean, brisk and tightly coiled, with fine bubbles, high‑pitched citrus, and less overt richness, giving a very straight, saline profile. This is particularly compelling with raw seafood, crudo, and lightly fried dishes, where its cut and minerality really shine.
