The 2021 Charles Heintz Vineyard Blanc de Blancs (Ultramarine) is intensely mineral and tightly focused, showing golden apple, citrus pith, lemon cream and a cool, coastal salinity. The palate is compact yet layered, with fine, persistent mousse, racy acidity and a chalk‑driven core that slowly opens with air into notes of brioche and sea spray. Structure and tension dominate over richness, giving a very precise, almost Chablis‑like profile in sparkling form. Long, savoury and mouth‑watering on the finish, it is superb with oysters, uni, tempura and other delicately textured seafood.
