2023 Maison Skyaasen Pommard

$1,180.00 HKD

Maison Skyaasen, a micro-négoce in Meursault led by Joachim and Olivia Skyaasen, crafts this Pinot Noir from three Pommard parcels: Croix Blanche (clay-rich near Beaune), Poisots (near Volnay), and high-altitude Noizon with old vines in shallow limestone soils. The 2023 vintage reflects their minimal-intervention philosophy, starting with hand-harvested grapes undergoing 100% whole-cluster semi-carbonic maceration for two weeks in wooden or stainless fermenters—no pump-overs or punch-downs for a gentle infusion style.

Elevated by gravity into old barrels, it ages on lees for a year, then bottles unfined, unfiltered, with no added sulfur, yielding a pure, vibrant expression at 13% ABV. Tasters note fruit-forward red and black berries like raspberry, morello cherry, black cherry, plum, and blackberry, laced with violet, spice, mint, earth, mushrooms, forest floor, and savory depth. High acidity and firm tannins provide structure, balanced by silky texture and a peppery, saline finish promising 5-10+ years of aging.
