2025 Tonico Eupeptico Chiaretto di Bardolino Classico Tenuta La Cà

$1,580.00 HKD

Tonico Eupeptico’s 2025 Chiaretto di Bardolino Classico is a dry rosato made in collaboration with Tenuta La Cà. The grapes come from Calmasino in Veneto’s Bardolino area, where clay and limestone soils were shaped by ancient glacial activity. Corvina, Corvinone, Rondinella and Molinara come together in this distinctive interpretation of the local rosé tradition.

Hand-harvested whole bunches are gently foot-trodden before careful pressing. Fermentation takes place spontaneously with native yeasts in 500-litre tonneaux, followed by malolactic fermentation. The wine then spends six to eight months on its lees in the same barrels. Bottling takes place directly from barrel without filtration or pumping, reflecting the small-scale, hands-on approach behind Marcel Mühlberger’s collaborative project.

The importer describes a delicate, fragrant wine with a saline, mineral finish. Its dry profile and lees ageing make it an interesting rosato to explore at the table. We suggest serving this 750 ml bottle lightly chilled with grilled fish, prawns, tomato-based dishes or antipasti. A generous white-wine glass will give its aromas room to develop as it warms.
