Champagne Legrand-Latour Éocène Brut Nature
Éocène is a Brut Nature Champagne from Legrand-Latour, the family estate in Fleury-la-Rivière in the Vallée de la Marne. Thibault Legrand builds his range around the geology beneath the vines, drawing inspiration from the fossil-rich layers explored by his father at the family’s Cave aux Coquillages.
The cuvée takes its name from the Eocene epoch and brings together sites shaped by clay, sand and green-clay deposits. The importer describes recent releases as combining Chardonnay and Pinot Meunier, with energy, depth and a persistent finish. Native-yeast fermentation and barrel maturation are central to the estate’s cellar approach, followed by extended bottle ageing under cork. The Brut Nature finish adds no dosage, giving the wine a distinctly dry profile and leaving its texture and vineyard character in focus.
We suggest serving this 750 ml bottle around 10–12°C in a tulip or white-wine glass. Oysters, scallops, grilled white fish or roast poultry would make fitting companions. Allow a little time in the glass to explore how its aromas and texture develop as it warms.
