2023 Johannes Aufricht - Completer

Johannes Aufricht’s Completer 2023 is a distinctive still white from Baden and Lake Constance, built around the rare, historic Completer grape—a local variety with more than a millennium of regional history. Johannes uses the region’s cool, elevated conditions to preserve freshness while achieving full ripeness, giving the wine both tension and quiet depth.

The 2023 opens with pear, green apple, kumquat and lime, alongside subtle floral notes and a faint waxy, savoury character. On the palate it is creamy yet linear, with vivid acidity driving the wine forward and a salty, gently bitter mineral finish that keeps it dry and refreshing. It feels closer in spirit to a refined, Burgundian-influenced alpine white than to an overtly aromatic German wine: restrained, textured and food-focused.

Serve lightly chilled with grilled fish, scallops, roast chicken, white asparagus, mushroom dishes or aged alpine cheeses. Its acidity and structure should also allow it to develop positively in bottle over the next several years.
